I put on an outfit that had been in my "skinny box" and is now a little too big for me. (Yippee!)
While running errands I grabbed an order of french fries from a fast-food place and could only eat a handful before feeling guilty and icky.
After that my day got really busy and I had to work and play chauffeur to a couple of my kids and my niece.
One son went to a Halloween party at his best friend's house, so I stayed for awhile while the other kid and niece were at a dance.
They had a lot of food and party treats, and I was very hungry, but the only thing I could eat was the salad. I was kind of glad to have some veggies after eating those fries earlier.
Their house is lovely, and this is where I sat and watched the waves while the sun set. Gabriel came and played on the piano for awhile.
See the beautiful stair case and foyer? Below that is the more formal dining area and behind that is the large wine room.
When I got home I microwaved some new potatoes, quartered them, then dredged them through the breading I had leftover from yesterday's meal. I softened some chopped onion in olive oil over medium heat, added chopped garlic, and a little of the sweet chili sauce from yesterday.
It sounded good and everyone in the house came to the kitchen to see what smelled so good, but when I tasted it, I wasn't a big fan. Hubby gladly gobbled it all up.
I still had a hot skillet with oil, onions, garlic and a little sweet chili sauce. Shrimp sounded like a good addition. I also added some crushed red pepper and another chopped onion.
This looked like it had a lot more potential, and was definitely healthier than adding another carbohydrate to my day. I also added a couple teaspoons of the breading from yesterday's meal, to thicken it up and make it a bit saucy.
When that was almost done cooking I decided this looked like it would be good over pasta. So, I still ended up with some carbs.
I thought I would show you a bit of what rice pasta looks like while it is cooking. In case you were wondering, Rizopia pasta products are the best I've used so far. PC Organics makes some decent rice pasta, too, but Rizopia is my preference.
Here is the pasta half-cooked.
Here it is, assembled, with some fresh tomatoes tossed in.
It was very yummy, but would have been yummier if the pasta hadn't been under-cooked. I was in such a hurry to eat that I didn't do my math correctly and drained the pasta 2 minutes too early.
Ah well, I got enough calories and nutrition to keep me going until tomorrow, which is a fresh day for eating good foods.
